Day 67: Recipe butternut curry soup

Ingredients

  • 1 medium sized butternut squash- 3cups chopped in cubes
  • I small Zuchinni
  • I large onion
  • 2 large tomatoes
  • Curry powder
  • Coriander powder
  • Black pepper
  • Salt
  • Cumin powder
  • Knor chili beef cubes

Makes 4 servings: enough for a week of lunches
* made 8 cups of soup/ Serving for me is 2 cups

Protein 3.5 (I usually add about 100g of pan fried tofu to it for about 10g of protein)

chopped butternut squash

chopped zucchini

cook everything down with spices and then add broth

ready to eat
